This soup is very simple and easy if you have a pressure cooker. You should make sure to soak the beans overnight. Ingredients

  • 1 lb Black Beans
  • 1 large onion, diced
  • 1 red bell pepper, diced
  • 4 cloves of garlic
  • 1 tbsp cumin
  • 1 tbsp coriander
  • 1 tbsp oregano
  • 4 cups beef or vegetable broth
  • 1 cup water
  • 2 tsp Kosher Salt
  • Olive Oil

Optional Garnishes

  • Lime juice (for best results, add the juice from 1-2 limes to the soup)
  • Cilantro
  • Sour cream
  • Diced Avocado

Preparation

  1. Saute the onion and bell pepper for 5 minutes
  2. Add the garlic and spices, cook for a couple of minutes
  3. Add the beans and broth
  4. Pressure cook for 25 minutes, turn off the heat and let pressure come down naturally.
  5. Add salt and fresh ground pepper, blend with a stick blender until you get to the right consistency.

Notes

  • The salt will need to be adjusted depending on the broth you use.
  • If you do want to soak the beans overnight, reduce the cooking time down to 15-20 minutes.
