Pressure Cooker Black Bean Soup Recipe
This soup is very simple and easy if you have a pressure cooker. You should make sure to soak the beans overnight.
Ingredients
- 1 lb Black Beans
- 1 large onion, diced
- 1 red bell pepper, diced
- 4 cloves of garlic
- 1 tbsp cumin
- 1 tbsp coriander
- 1 tbsp oregano
- 4 cups beef or vegetable broth
- 1 cup water
- 2 tsp Kosher Salt
- Olive Oil
Optional Garnishes
- Lime juice (for best results, add the juice from 1-2 limes to the soup)
- Cilantro
- Sour cream
- Diced Avocado
Preparation
- Saute the onion and bell pepper for 5 minutes
- Add the garlic and spices, cook for a couple of minutes
- Add the beans and broth
- Pressure cook for 25 minutes, turn off the heat and let pressure come down naturally.
- Add salt and fresh ground pepper, blend with a stick blender until you get to the right consistency.
Notes
- The salt will need to be adjusted depending on the broth you use.
- If you do want to soak the beans overnight, reduce the cooking time down to 15-20 minutes.
